A very special salami made from organic, Pasture-for-Life beef raised at Fowlescombe Farm. It’s simply flavoured with smoked garlic and a little pork fat, for a soft, yielding texture. We smoke the garlic ourselves over beech and apple wood. Delicious.
The beef comes from pedigree English Longhorn and Beef Shorthorn cattle raised at our home on Fowlescombe Farm in Devon. As well as being organic-certified and regenerative, the farm is also Pasture-for-Life certified meaning the cattle eat grass exclusively, with no cereal supplements. This allows these historic breeds to grow slowly and naturally, producing beef of exceptional quality.

Keep refrigerated but bring to room temperature before serving.
Slice thinly and serve at room temperature.
As part of a platter, this salami pairs well with goat’s cheese, prunes, sweet pickled peppers and cornichon. Alternatively serve on its own with a glass of meaty red wine.
