Our take on another Italian classic, Capicola, using two of Scotland’s Premium Native Breed Cattle. These Highlanders and Galloway came from the pastures of Downfield Farm, where custodians Bob and Jane Prentice slowly rear their herd situated, in what was the old Kingdom of Fife.

These two Capicola have been simply cured and then aged for a minimum of eighteen months, taking the length and depth of flavour into another league of charcuterie gastronomy. The lean but rich texture of both these breeds have produced a flavour profile similar to that of really well aged cheese. Strong, long lasting and unforgettable taste.

Note: Capicola is Italian for Collar, Neck or Shoulder.

Cured – Ready to Eat Open the pack, allow to come to room temperature and serve. This product will arrive with a minimum of 12 days shelf life. Once opened consume within 3 days.

  • Serve in a good fresh baguette with horseradish cream and roasted red pepper.
  • Serve a couple of slices alongside a celeriac remoulade, a good sourdough bread toasted.
  • Serve as part of a charcuterie platter with pickled vegetables, a selection of your favourite cheeses, and a glass of Fino.
